Epirus Pepeki

200 gr. soft flour
1 teaspoon baking powder
2 eggs
2 yogurt pots
250ml olive oil
1 tablespoon sweet paprika (optional)
300 gr. feta cheese, crumbled or coarsely grated

Epirus Pepeki

Sieve the flour and baking powder together. Place the yogurt, the eggs, olive oil and paprika in a large bowl. Whisk with a whisker till you have a homogeneous mixture. Then add the feta cheese and stir. Add the flour, a little at a time, and continue stirring. Grease with olive oil and dust-flour a shallow baking pan. Empty the mixture in it and smooth it with the back of a spoon.

Place the pan on the bottom shelf of a pre-heated oven and bake at 1800C for 45 minutes until golden.
