Metsovitikes flogeres (cheese rolls)

1 kilo phyllo dough
3 eggs
1 cup sugar
1 kilo peeled and crushed walnuts
1 teaspoon cinnamon
1 Vanilla

For syrup
2½ cups sugar
2 cups water
½ lemon (juice and Peel)
1 Vanilla

Metsovitikes flogeres (cheese rolls)

Beat sugar and eggs in a mixer until they are white. Add cinnamon and then the walnuts. Cut the dough into 5 pieces and lightly butter each of them. Take a piece of dough and put one tablespoon of filling on one end. Start rolling the dough from the sides and make “flogeres” (flutes).
Prepare the syrup in a wide saucepan where you boil all the ingredients for 6 minutes.

Place the flogeres in a buttered baking pan and sprinkle them with a bit butter. Bake at 170°C until they get a golden brown colour. While the flogeres are still warm, dip per two in the pot with the syrup and then remove them immediately with a slotted spoon.
