Kazan Dibi

1½ liter milk
2½ cups powdered sugar
3 tablespoons butter
1½ tablespoons rosewater
2½ teaspoons cinnamon
2 vanilla pods
2 cups rice flour

In a saucepan heat milk, powdered sugar, rice flour and vanilla stirring occasionally, until rice flour dissolves. Cook by mixing well with a wooden spoon to keep it from sticking, stirring constantly, until the mixture thickens.

Grease a baking pan and sprinkle with powdered sugar. Spread the pudding mixture on the pan and put at the bottom of the oven at 2000C for 25-30 minutes until bottom will caramelize. Reduce the temperature to 1500C and bake another 10 minutes. When it is ready, remove it from the oven and let cool down. Cut the pudding to rectangulars and serve up-side down, the burnt side up. Sprinkle with rose water and cinnamon.
