In 2019, Konstantinos Tsirimokos began experimenting with the cultivation of legumes on the family-owned farm. The first crops planted were lentils and chickpeas, and the production proved highly successful, both in quality and taste. Initially, the legumes were distributed to local stores as well as to family friends and acquaintances, creating strong demand for the following year’s harvest.
